If you have a desserts shop or a job selling desserts, you must be worried about whether the cake will go bad early. So how long can the cake been preserved? The shelf life of the cake depends on many factors, such as sales dates, cake materials and storage methods. If stored properly, the cakes will be sold by date.
One of the best ways to store and sell cakes is to borrow specialized tools - Cake Display Chiller.
The back of the cake display chiller is usually opaque, the other sides are made up of transparent glass, which is very suitable for displaying small items such as cakes, beverages, etc. The large area and high efficiency evaporator of cake display showcase reduces frost accumulation and greatly increases the effective use area. The defrosting process of cake display fridge adopts double control of defrosting temperature and time to save electricity.
Factors affecting the shelf life of cake:
1. Cake material will affect its shelf life
Because fresh baking cake tastes best, so we recommend that you should eat cake within 24 hours after having made it. But nearly every people will meet the problem of can’t eat the cake in time. If you are facing this problem, you should know that some materials in cake decides its taste time.
If the cake contains wet ingredients such as fresh fruit, fruit preserves or cream, cream cheese or cream jelly, it should be eaten as soon as possible.
Stored in the cake display chiller, the cake with cream or be filled with ganache will last for three to four days.
If the cake contains custard, cream, cream cheese or fresh fruit, it can last up to one to two days.
If your cake has cream cheese icing, we do not recommend keeping it at room temperature, you’d better keep it in the cake display cabinet from one to two days, then eat it before it warms to room temperature.
Fruit cakes which wrapped in marzipan and icing will last longer.
You’d better avoid refrigerating cakes with sugar, soft candy or food coloring because the color will change.
We do not recommend freezing cake which contains meringue or cream icing because they will deteriorate.
2. Package affects the shelf life / freshness of cake
1) Cover your sponge
We recommend to cover the sponge completely with icing because it helps to prevent the sponge from losing moisture. If you apply a tube of frost on your cake or expose its sponge, it will dry out more easily when stored.
2) Wrap your cake
Always keep sponge, cake or cake slices in the plastic wrap. This is to form a protective barrier and prevent them from drying out. Make sure that all cut edges are completely covered to prevent the sponge from drying out. The cake can be frozen for a long time, up to 4 months. It is best to wrap the sponge separately and place the frosting in a closed container before freezing.
For cakes that have already been frosted, wrap them all in whole or in slices in plastic wrap and place them in sealed plastic containers or airtight resealable bags. This prevents it from absorbing aroma from the cake display fridge.
You can also wrap a foil layer around the cling film to protect the cake. Make sure there is enough space on the cake display showcase so that the cake does not squeeze.
Besides the materials and package will affect the shelf life of cake, there are also other factors needed to be taken into consideration, such as direct sunlight, temperature of the cake display chiller and so on. If you can reasonably use the cake display chiller and fridge, the shelf life of the cake must be within your estimate.
